2 cups shredded unsweetened coconut
1 tbs coconut oil, melted
1 tbs adaptogenic cookie drip
1 tsp rose petal powder
2 tsp maple or monkfruit syrup
¼ vanilla extract
1 pinch Himalayan pink salt
2 bars of 100% raw cacao
1 tbs coconut oil
Line one small baking sheet with parchment paper and set aside.
Add shredded coconut to a food processor and combine with coconut oil, rose petal powder and cookie drip. Process for about two minutes, until a smooth consistency is reached. Add syrup, vanilla and salt. Process another minute. Shape into small balls and place on baking sheet. Place in fridge and let cool for 10 minutes. While truffles cool, begin to melt your dark chocolate.
For chocolate coating:
Place chocolate bars in small sauce pan and set to medium-low heat. When chocolate has fully melted stir in coconut oil with wooden spoon. Remove from heat.
Remove baking sheet from fridge and gently pour chocolate over truffles. Place back in fridge and let cool for another thirty minutes to an hour. Enjoy!!
