Probiotic Market Salad

Makes enough for 4
1 bunch curly kale, de-stemmed and massaged in olive oil and sea salt
2 cups beet and carrot (any proportion), grated
1/4 cup red onion, slivered 
2 whole avocado, cubed 

1/2 cup olive oil 
1/4 cup re:light vinegar
3 tbsp maple syrup 
Juice of 1 lemon 
2 tbsp tamari 
2 tbsp mustard 
Whisk all dressing ingredients together and toss over salad. 
Serve with fresh bread, olive oil, salt, and pepper.
